Sourced from select smallholder farms in Ermera District, Timor-Leste, this natural lot is processed at the Railaco facility by Timor Global — one of the country's most established exporters.
Only hand-picked, hand-sorted ripe red cherries advance through flotation density sorting.
Cherries undergo 48–72 hours of sealed anaerobic fermentation before careful sun-drying on raised beds with protective cocoons to regulate airflow and humidity.
